What’s New With You?

So much has been going on in our little kitchen we have had little time for much else these days. If you are wondering where you can find us this year we are setting up for an exciting and BUSY summer!

We start things off this weekend on Saturday, Cinco de Mayo! at the opening of the Middlebury Farmers Market. We are excited to be involved with this great local market and all its great vendors and community. That kicks off the market season and you will definitely be seeing us throughout the summer in Brandon on Fridays, forget your lunch, NO PROBLEM! and Rutland with our ever increasing list of seasonal meals and yummy baked goods, and yes we will have those gluten free cupcakes and maybe even more gluten free creations!

Other than the markets we have a few festivals already lined up including Middlebury’s Foodie Favorite, FOODAROO and Bristol’s Rockin’ music festival and street fair, Pocock Rocks!

We have many other exciting adventures on the horizon so stay tuned here or keep up on our social media over at Facebook-land or Insta! (and if you feel so inclined give us a like and follow)

Christmas Markets

Tis’ the Season! Markets are all around us these past weeks. From Moon Light Madness, to Christmas Fairs, Special Holiday Farmers Markets. We love to support our local markets and have been going and buying as much of our holiday presents from our neighbors. We love the feel these markets have; the chill in the air, the smells of candles and cider, all the twinkle lights! Its all so festive. From the handmade earrings lovingly wrapped to the scarf that took weeks to knit, these are the gifts that we love so much. Sure we still buy things from the bigger stores too, who doesn’t? But if we can throw in that hand carved wooden spoon from the talented artist down the road….. well you get the drift!

These are our people! We work the markets too. All summer you will find dishing out our meals. And of course we had to join at least 1 Christmas Market! You can find us in Brandon on December 16th at the Neshobe School. We will have order forms for baked goods for the holidays and of course hot food to enjoy on the spot while you browse and find unique presents for the lucky ones on your list from all our neighbors!

Community

This summer has just blown by. We have been at the Brandon Farmers Market and at the Rutland Farmers Market both Friday and Saturday all summer long. It has been a whirl wind adventure for sure and we are gearing up for the winter markets (stay tuned)! We have had the opportunity to meet some great people, both vendors and shoppers alike! We have cooked and baked our little (not so little ;p) butts off and we have had the very rare chance in business, a golden ticket to help figure things out. What works, what doesn’t work, what could work better, and what people really want to work! It has been an amazing experience. Along the way we have been guided by seasoned pros. People who have been doing this; working markets, catering, and cooking for the masses for years have taken us under their proverbial wings, given us advice, help, strength and friendship. This community that is Vermont is amazing. We couldn’t be prouder and more excited to continue on this adventure with you.

Relying on our neighbors, our friends for the food that we eat goes back centuries. We like to think we are helping bring some of that spirit of community back into this modern, fast paced world we find ourselves. We can’t turn back the hands of time and we don’t have to nor do we necessarily eat to. We can have our cake or pies or dinners and eat them too!  We can be a part of our community, support the local economy, and we don’t need to add another day to the week to do it! We just need to rely on our neighbors, our friends, our community…. Just like in the old days right?

We love these relationships we are building and how food ties it all together. We can’t wait to see how big this neighborhood gets!

What exactly is a “Hand Pie”?

Some call them turnovers, pasties, meat pies, empanadas, or as one very famous company branded them as “Hot Pockets™” But to us it is just a convenient, mess free way to eat pie, any kind of pie! And we love pie. We stuff our pies with either sweet or savory fillings all fresh made with locally sourced, seasonal ingredients. They are a handy meal on the go, a lunch time favorite, an after school pick-me-up, or just a late night single serve dessert. We love them!

Our pies are wrapped in a flakey handmade pie dough and eat one is individually hand stuffed! That is a lot of crimping! But you can taste the difference, whether you are heating it up at home in the oven or picking 1 up fresh from the farmers market or an event each pie will always taste fresh baked.

We know allergies and because we “get it” we not only have our regular pies but we stayed late in the kitchen and came up with a gluten free variety as well a vegan or we can even accommodate a gluten free/vegan version! We got you covered.

Cupcake Games

We never intended to get into the “Cupcake Game”. I mean there are some really good cupcakes out there, believe me I have sampled my fair share! We thought, we do pies leave the cakes to everyone else. And then….. And then…… well we got a request we a gluten free vegan cupcake. So like any good people pleaser, we got in the kitchen. Kerri is the main baker around these parts and she already makes a mean cupcake, no really it is good! She comes from a family of bakers so of course I enlisted her help here. My nephew is a severe celiac and that poor kid suffers through dry baked goods so it was important for me especially to make something that he could eat, scratch that, that he WOULD eat! But with it being vegan I knew it was not going to be easy.

Here in Vermont, every July there is 1 thing that every farmer has in abundance; ZUCCHINI!!! Kerri and I put our heads together. Using healthful, in season ingredients we came up with a super moist, gluten free, healthy, vegan cupcake with not a ton of added sugar. We even came up with a “cream cheese” frosting!

Since then people can’t get enough of our cupcakes! Both our gluten free, vegan, and regular. I guess we are in the cupcake game!

What’s the big deal about quinoa and what exactly is it?

Quinoa is neither a grain nor a cereal but actually a seed. It is related to the amaranth family but is actually closely related to spinach and beetroot! I bet you didn’t know that!! I didn’t either, I had to look it up. What I do know is it is crazy good for you, easy for you to digest, a complete protein – yeahy for vegans!, and is gluten free. It is also easy to cook. However, word on the street is, it can be bland. Ok I get it. But so can white rice or couscous and people make and eat those in droves. Quinoa over the years has been getting much more popular and that is great. We love it over here. Many of our meals, especially the vegan or gluten free ones contain it. We toast it to give a nice deep flavor and we season it. We always mix it with other farm fresh ingredients and we love to dress it up. Whether its in a salad with kale or mixed with dried fruits and nuts and served like a savory sweet rice, we can’t seem to get enough.

Oh did I mention, like rice it comes in different colors! You have your classic “white”, red or black! Each has its own taste profile and we just love them all.
